Herbes de Provence used to refer to herbs typical to Provence but became a commercial blend in the 1970’s. The blend now typically contains a mixture of lavender, savory, basil, thyme and fennel. Herbes de Provence are usually used for seasoning grilled foods such as meat and fish and vegetable stews. It is a great addition to many summer dishes.
